Jell-o filled Watermelon

Ingredients -

1 3-oz box of Watermelon Jell-O
2 cups of boiling water
1 cup of cold water
1 small 8- to 10-inch watermelon
Directions -

Take a sharp knife and cut the watermelon in half. Go around the rind with a sharp knife to mark where watermelon needs to be removed. Scoop around the watermelon to make room for the Jell-O. You can save the watermelon and use it later! Scrape along the sides so itís kind of smooth and pour out all the leftover juices.

Add 2 cups of boiling water to the Jell-O powder. Stir until it is dissolved. Add 1 cup of cold water and continue stirring to lower the temperature of the mixture. When the texture feels a little thicker, transfer to a pourable measuring cup. Adjust the amount of packages of jello and cups of water based on the size of your watermelon.

In a pan, place a number of paper towels to on the bottom to help hold the watermelon level when pouring, or use a bowl that is large enough to keep it level.

To cut, use a sharp knife. Cut the watermelon in half using gentle sawing motions to get it in, and then gently push straight down. Then, cut the watermelon into wedge pieces all the way through the rind.

For a grown up twist; substitute 1 cup of water for 1 cup of vodka. Let chill and serve to your friends at a party. Be careful, as these can be potent!
