Zucchini Bread

Ingredients -

3 eggs
1 c. oil
2 c. sugar
2 c. finely grated zuccini
3 tsp. vanilla
3 c. flour
1 1/2 tsp. baking powder
1 tsp. salt
1 1/2 tsp. baking soda
3 tsp. cinnamon
1 c. chopped nuts (optional)
1 c. chocolate or peanut butter chips (optional)
Directions - Beat eggs until fluffy. Add all other ingredients and mix thoroughly. Grease two bread pans and divide mix. Bake at 325 degrees.

Doubling or tripling the batch works as the loaves freeze well. This is a great way to use all the garden zucchini.

For a variation--replace 1/3 cup of flour with 1/2 cup of cocoa for Chocolate Zucchini Bread or add your favorite candy chips!

For a lower calorie alternative, without losing any of the flavor, substitute up to half of the oil with equal amount of unsweetened applesauce. You can use cinnamon or regular applesauce if you prefer.
