Zucchini Bread

Zucchini Bread

Ingredients -


3 eggs
1 c. oil
2 c. sugar
2 c. finely grated zuccini
3 tsp. vanilla
3 c. flour
1 1/2 tsp. baking powder
1 tsp. salt
1 1/2 tsp. baking soda
3 tsp. cinnamon
1 c. chopped nuts (optional)
Directions - Beat eggs until fluffy. Add all other ingredients and mix thoroughly. Grease two bread pans and divide mix. Bake at 325 degrees. Doubling or tripling the batch works as the loaves freeze well. This is a great way to use all the garden zucchini. For a variation--replace 1/3 cup of flour with 1/2 cup of cocoa for Chocolate Zucchini Bread.
