A great marinade for authentic steak tacos!

Mojo Marinade
 4 cloves of garlic, minced
 1 jalapeño, minced
 1 handful of cilantro, chopped
 salt and fresh ground pepper
 2 limes, juiced
 1 orange, juiced
 2 tbsp white vinegar
 ½ cup olive oil

 2 lbs flank steak
 1 batch of mojo marinade
 salt and fresh ground pepper

For the Mojo, in a mortar and pestle or large bowl, mash together the garlic, jalapeno, cilantro, salt, and pepper to make a paste. You can also use a blender if you do not have a mortar. Put the paste in a glass jar or plastic container.

Add the lime juice, orange juice, vinegar, and oil. Shake it up really well to combine. Use as a marinade for the flank steak, but you could also use this same marinade for other meats!

Lay the flank steak in a large dish and pour the finished mojo mixture over it. Wrap tightly in plastic wrap and refrigerate for anywhere between 1 and 8 hours, so the flavors can soak into the meat. Don't marinate the steak for more than 8 hours though, or the fibers break down too much and the meat can get mushy.

Grill the steak for 7 to 10 minutes per side, turning once, until medium-rare. Remove the steak and let it rest for 5 minutes to allow the juices to settle. Thinly slice the steak across the grain on a diagonal to get the most tender cuts!

Serve with tortillas and your favorite toppings, including Pico de Gallo, cheese, chopped lettuce, or fresh cilantro!
