Enchilada Sauce
A smoky, spicy, sauce that is great for topping your favorite Mexican dish!
Chop the garlic and jalapeno, and add to a small blender. Add the 1/4 cup of chicken broth and the chipotle peppers in adobo sauce. Puree the mixture until smooth.
In a saucepan, heat the canola oil on medium heat. Add flour, chili powder, and chipotle powder and stir until the red coloring turns a little brown.
Add tomato sauce, pureed mixture, and remaining ingredients to the saucepan. Stir well to incorporate and heat thoroughly.
Cook for 8-10 minutes, with occasional stirs. Serve warm over enchilada, burritos, or your favorite dish!
