English Toffee

Grandma Power's toffee is a great treat that can include nuts or any other item of your choosing to make it your own!

Ingredients
  lb butter (3 1/2 sticks)
 2 cups white sugar
 1 tbsp light corn syrup
 ¼ tsp salt
 ½ cup chocolate
 chopped toasted almonds (optional)

In a heavy-bottomed pan, melt the butter over low heat. Once melted, add in the sugar sirring constantly with a wooden spoon, and raise to a medium heat until the mixture comes to a boil.

Add the corn syrup to the mixture. Cook over medium heat, stirring to prevent any burning. Cook until the temperature reaches 295 degrees. Add in the salt and nuts, if you choose, and finish stirring.

Pour the mixture into a well buttered shallow pan (11x16 with 1/2" sides), smooth out to about 1/4" thick. Melt the chocolate, and pour over the top. Once it has firmed up, crack the toffee to form bite-sized pieces!

Note: You can also crack the firm toffee first, and then dip it into the chocolate for a more professional look
