Smoked Chicken
The tastiest smoked chicken you can do at home!
Take your chicken thighs, and trim off any excess fat and skin. Lightly form them so the chicken are all roughly the same size.
Put the chicken into a shallow pan, and pour the brine over the chicken. Cover the pan, and let the chicken soak in the brine for at least 2 hours.
Take the chicken out of the pan, pat down with a paper towel to get the excess brine off. Place all of the chicken thighs skin-side up, and use a Jaccard to tenderize the meat
Flip the chicken over, and season the bottom side of the chicken with your choice of BBQ rub! There are tons of great options, so use your own preference! Once all are seasoned, flip the chicken and season the top side (with skin) of the chicken.
In an aluminum pan, place butter in the middle of the chicken thighs. Place on a smoker at 275 degrees. Let smoke for ~2 hours, or until the color of the chicken looks good.
Cover the chicken pan with aluminum foil, and let cook on the smoker for another ~1 hour.
Check the temperature of the chicken, and make sure it is over 165 degrees. If it is, remove the chicken from the butter, and place it directly on the smoker grates for ~10 minutes to remove a lot of the excess butter.
Remove the chicken from the smoker, dunk in your favorite sauce, and enjoy!
