Summer Sauce
Not a strong sauce, but great over pasta year round! Great way to use some of your garden tomatoes!

Using a heavy enamel pot, pour in the Olive Oil and heat. Cook onions until soft, stirring to keep from sticking to the pan. Add the green bell peppers and garlic and let cook for ~5 minutes
In another pot, start boiling water (enough to cover all your tomatoes). Chop the ends off the tomatoes, as well as any bad spots, and let the tomatoes boil for around 2 minutes. Take them out of the boiling water, run under cold water, and remove the skin. Once all tomatoes have been peeled, chop the tomatoes and add to your pot with the onions and peppers

Let this mixture cook for around 40 minutes, simmering. Do not let it get to a boil.
Add the basil, thyme, nutmeg, hot sauce, and salt/pepper to taste. Let it cook for another 20 minutes, again not boiling.
After a total of 1 hour cooking, turn off the heat and let it cool. Once cooled, you can put in containers to freeze, and enjoy year round!
