Zucchini Bread
An easy to make treat everyone will enjoy.
Beat eggs until fluffy. Add all of the other ingredients and mix thoroughly.
Grease two bread pans and divide mix evenly. Bake at 325 degrees. Makes 2 loaves.
Maven Tip: Doubling or tripling the batch works great as the loaves freeze well. This is a great way to use all your garden zucchini.
Maven Tip: For a variation--replace 1/3 cup of flour with 1/2 cup of cocoa for Chocolate Zucchini Bread or add your favorite candy chips!
Maven Tip: For a lower calorie alternative, without losing any of the flavors, substitute up to half of the oil with an equal amount of unsweetened applesauce. You can use cinnamon or regular applesauce if you prefer.
