Zucchini Brownies

A great way to hide some veggies in a dessert!

Ingredients
 ½ cup vegetable oil
 1 ½ cups sugar
 2 tsp vanilla
 2 cups all purpose flour
 ½ cup unswetened cocoa powder
 1 ½ tsp baking soda
 1 tsp salt
 2 cups shredded zucchini
 ½ cup chopped walnuts (optional)
Frosting
 6 tbsp cocoa powder
 ¼ cup margarine
 2 cups powdered sugar
 ¼ cup milk
 ½ tsp vanilla

Preheat the oven to 350 degrees. Grease and flour a 9x13 pan

Mix the oil, sugar, and vanilla until fully blended.

Combine the flour, cocoa, baking soda, and salt, and then mix into the sugar mixture. Then, fold in the zucchini and nuts, and spread evenly into the greased pan.

Bake for 25-30 minutes. The brownie should spring back when lightly touched.

While the brownie cools, melt the margarine and cocoa and let cool to incorporate. In a medium bowl, mix the powdered sugar, milk, and vanilla. Mix in the cocoa butter. Spread over the cooled brownies and enjoy!
