3-2-1 Ribs

A method for cooking spare ribs with three hours in smoke, two hours wrapped in foil, and 1 hour back in the smoke. I think six hours of cooking is far too long and produces mushy ribs.  We typically use a 2-1.5-.5 method, but it doesn’t have nearly the same ring as 3-2-1!
