Blueberry Cobbler

A great summer cobbler that is quick to make!

Ingredients
 4 cups blueberries
 3 tbsp white sugar
  cup orange juice (no pulp)
  cup all-purpose flour
 ¼ tsp baking powder
 1 pinch salt
 ½ cup butter (softened)
 ½ cup white sugar
 1 egg

Preheat oven to 375 degrees

In a 9x9" baking pan, mix the blueberries, 3 tbsp of sugar, and 1/3 cup orange juice. Set the pan aside.

In a small bowl, mix the flour, baking powder, and salt thoroughly. Set the bowl aside.

In a medium bowl, or kitchen aid mixer, cream butter and 1/2 cup sugar until light and fluffy. Beat in the egg and vanilla extract. Gradually in the flour mixture from the small bowl. Stir just until all ingredients are combined.

Drop the batter mixture evenly over the blueberry mixture. Try to cover as much of the blueberries as possible.

Bake in preheated oven for 35-40 minutes, until the topping is golden brown and filling is bubbling.
