Chicken Tinga Tacos

A flavorful way to cook meat for tacos. Could use the tinga sauce on anything!

Ingredients
 2 lbs boneless, skinless chicken breasts
 ½ large white onion; chopped
 7 oz (can) chipotle peppers in adobo sauce
 15 oz (can) fire roasted dice tomatoes
 4 cloves of garlic; minced
 4 oz (can) green chilis
 1 tbsp chicken bullion
 1 tbsp dried oregano
 1 tbsp dried cumin
 1 tbsp dried coriander
 2 tsp salt
 10 tortillas

In a pan, saute the chopped onions for around 5 minutes. Add garlic and saute for 2-3 more minutes.

Add chipotle peppers (with sauce), tomatoes, chilis, and all seasonings to the pan. Let simmer and cook for around 5 minutes.

Pour the hot tinga mixture into a large food processor or blender. Be sure to let some of the heat/steam escape while blending. Blend until smooth.

Place the rinsed chicken breasts into a crockpot. Pour the tinga mixture over the chicken and cook on low for 5-6 hours.

Shred the chicken and pour the tinga sauce back over the shredded chicken and mix to incorporate. Serve with the warm tortillas and your favorite toppings!
