Wisconsin Style Fried Cheese Curds
Great game day cheese curds, as found all across Wisconsin!
Heat oil in a deep fryer or large pan to 375 degrees F using enough oil to completely cover the curds in the pan you are using.
Whisk together the milk, flour, beer, salt, and eggs to form a smooth, thin batter. Place the package of cheese curds into the batter, ensuring they have been broken up before placing in the batter. Strain the curds using 2 bowls and a wire strainer to ensure full coverage. Continue to pour the batter over the curds and strain them if they are not fully covered.
Deep fry the curds placing carefully in the hot oil until golden brown. Will cook very quickly in the hot oil. I would cook in small batches to avoid burning any of the curds. Serve with Ranch Dressing or your favorite dipping sauce!
