Buffalo Chicken Balls

Mozzarella stuffed buffalo chicken balls, great for your parties!

Ingredients
 1 lb ground chicken (or shred and chop your own chicken)
 2 cups bread crumbs
 1 egg
 1 block of mozzarella, cut into small cubes
 1 bottle of your favorite brand of buffalo sauce
 ½ stick of butter
 salt, pepper, and seasoning to taste

Combine ground chicken, bread crumbs, 1/8th of the bottle of buffalo sauce, and egg in a bowl. Preheat oven to 450 degrees F. Spray a large baking dish with cooking spray. Roll chicken mixture into 1-inch balls. Press the ball flat, place a cube of cheese in the middle, and fold the chicken around the cheese. Place in a single layer on a baking dish. Should make around 30-40 balls.

Bake in the preheated oven until no longer pink in the center, about 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F.

In a crockpot, melt butter over low heat; stir in hot sauce. Pour into chicken mixture; knead until well incorporated. Season mixture with salt and pepper.

Remove the chicken balls from oven and place in the crock pop with buffalo sauce for serving.
