Carrot Ring

A less sweet variation of carrot cake, able to be served as a side dish with your meal.

Ingredients
  stick butter or margarine (softened)
 ½ cup brown sugar
 1 ½ cups flour
 2 cups gratted carrots (4-6)
 1 egg
 1 tbsp cold water
 ½ tsp baking soda, nutmeg, and cinnamon
  tsp salt
 1 tsp baking powder
Directions

Mix all of the ingredients in a large bowl and pour into a greased ring pan. A double batch typically fills a standard bunt cake pan.

Bake at 350 degrees for 60 minutes. The edges should be a nice golden color!

Be sure to serve it warm, so if you prepare ahead of time, you can reheat the ring in the oven for a few minutes!
